This traditional hand-cranked grain mill is made of cast iron and thus can be expected to last for even more than a lifetime. The cast iron is coated through electrolysis by a thin layer of tin that is food-safe. This excludes metal flake-offs in your ground grains.

The thumbscrew that releases the grinding heads also adjusts the coarseness of the grounds. The tighter it is screwed in, the finer the grounds. With this adjustment you can get either superfine flour or cracked grains.

Stones have always been used to grind all kinds of grain. Today, in spite of new materials such as stainless steel and hard ceramics, natural stones are still deemed effective, efficient, and durable grinders.

The Italians gave us pasta. Real Italian pasta is made of durum wheat flour or durum wheat semolina. This is the only pasta that can truly be cooked al dente. Now, they are also giving us a hand-cranked grain mill that can, if we have durum wheat, make real Italian pasta.

This is the Marcato Atlas Grain Mill. It can make whole grain flour, regular flour, cereal, bran, and flakes. Whole grains are ground through extreme pressure from three special knurled rollers made of nickel-plated steel. They are heat tempered making them more efficient and longer-lasting. Through the use of differently-sized cogs, the three rollers rotate at different speeds.

The distances among these rollers, and hence the size of the grounds, is adjusted with a regulating knob. This allows you to choose from fine to coarse grounds. There are three adjustments for flour and two for cereal flakes.

The locking clamp and control handle of the rollers as well as the housing are made of chrome-plated steel. The handle also has shockproof plastic for a more comfortable grip, and because it is equipped with internal gear reduction, it is easily turned.

Both the hopper and collecting bin are made of food-grade plastic and are washable. The machine itself, however, should only be cleaned with the supplied wooden cleaning brush.

A two-inch table clamp is likewise supplied to keep the machine from moving around when in use. With dimensions of 9 x 5 x 6 inches, it will not occupy that much of a space on your work table or countertop.
